gluten free strawberry pie

Happy National Cherry Pie Day!! Why? I have no idea, but apparently that is today, February 20. Who knew. (tomorrow is National Sticky Bun Day, and the day after is National Cook A Sweet Potato Day.) Random.

Well, I would not have known or cared, but Udi’s had a facebook post about it with a very tempting picture, and while I didn’t follow their recipe (it was one of those complicated ones with potato starch and xanthan gum . . . that is for the advance gluten free baking class, and I am simply not there yet!), I was able to come up with a little individual pie to satisfy the craving the picture gave me.

For the crust:

1/4 cup of gf flour (Trader Joe’s)

1 tbsb. softened butter

1 egg yoke

Mix together, flatten and press into a mug or mini-dish that can go into to the oven. Bake at 350 for 10 minutes. Remove from oven.

Add filling:

1 tbsp. jam

fresh strawberries

Add crumb topping:

1 tbsb. softened butter

1 tbsb. brown sugar

1 tsp. gf flour

Bake at 350 for 10 more minutes.


Yum! A healthier, less sweet idea might be forgoing the jam or the crumb topping entirely, but . . . yum. Also, I am certain it will work with regular flour so you can make one of each. Enjoy.
